I first had sweet potato fries at the wonderful Blue Tomato Cafe in Cornwall, which has sadly now closed. As soon as I returned home, I tried to recreate them.
Note that they don't really get crispy like normal fries, but they are still delicious and they don't take very long to cook. The key is to cook them in the oven on a high heat, so that they are soft in the middle and golden on the outside.
The secret ingredient here is the smoked paprika, which makes them very moreish. They are perfect with a burger and healthy too!
500g sweet potatoes (preferably large)
1 teaspoon of smoked paprika
Sea salt
2 tablespoons of extra virgin olive oil
- Pre-heat the oven to 210°C.
- Peel (or wash and scrub) the sweet potatoes.
- Cut into chips and place in a large bowl.
- Sprinkle over the olive oil, sweet paprika and sea salt.
- Mix together well (with your hands works the best!).
- Pour onto a baking tray and shake until they are spread evenly across the tray.
- Place in the oven and cook for 20-25 minutes until they are golden brown (and even a little burnt).
