Smashed potatoes are a really lovely potato option, especially if you're not a fan of boiled or steamed new potatoes.
Instead of serving your cooked new potatoes, leave them to steam dry, toss them in oil and salt, squash them on a baking tray and cook until deliciously crispy.
Easy! And so moreish too!
500g miniature or baby new potatoes
1 tablespoon Olive oil
Sea salt
- Pre-heat the oven to 200°C.
- Steam the potatoes until just tender.
- Set aside to cool and dry.
- Preheat the oven to 200.
- Place the cooled potatoes in a bowl with the other ingredients. Mix well.
- Tip onto a baking tray and spread evenly over the tray.
- Use a glass to squash the potatoes.
- Place in the hot oven for 25-30 minutes until nice and crispy.
- Remove from the oven, sprinkle over sea salt and serve.
