Smashed potatoes

Smashed potatoes


Smashed potatoes are a really lovely potato option, especially if you're not a fan of boiled or steamed new potatoes.


Instead of serving your cooked new potatoes, leave them to steam dry, toss them in oil and salt, squash them on a baking tray and cook until deliciously crispy.


Easy!  And so moreish too!

500g miniature or baby new potatoes

1 tablespoon Olive oil 

Sea salt

Method

Method

  1. Pre-heat the oven to 200°C.
  2. Steam the potatoes until just tender.
  3. Set aside to cool and dry.
  4. Preheat the oven to 200.
  5. Place the cooled potatoes in a bowl with the other ingredients. Mix well.
  6. Tip onto a baking tray and spread evenly over the tray.
  7. Use a glass to squash the potatoes.
  8. Place in the hot oven for 25-30 minutes until nice and crispy.
  9. Remove from the oven, sprinkle over sea salt and serve.
