I love Boulangère potatoes but often have some leftover, so decided to try and make potato cakes, and they worked really well!
If you don't have leftover Boulangère potatoes then take a look at my mashed potato cakes recipe, which also work really well with the sour cream, hot smoked salmon and dill topping.
- Drain off any liquid from the potatoes, then use a fish slice or large spatula to place the leftover Boulangère potatoes on a floured chopping board.
- Use a round cutter to cut the potatoes into potato cakes.
- Lightly sprinkle flour over the top of the cakes.
- Heat a little vegetable oil in the bottom of a frying or sauté pan, over a medium heat.
- Once the oil is hot, carefully add the potato cakes using a fish slice.
- Carefully turn over after a few minutes, once the underside of the potatoes has turned golden.
- Remove from the pan and plate.
- Top with dollops of sour cream, flaked hot smoked salmon and finely chopped dill.
