For the salmon with dill butter
1 salmon fillet per person
Butter (at room temperature)
Olive oil
Fresh dill
Seasoning
For the roasted beetroot
Bunch of fresh beetroot
Olive oil
Seasoning
To make the roasted beetroot
- Pre-heat the oven to 200°C.
- Top and tail, then peel the beetroot.
- Cut the beetroot in half and then into 2-3cm wedges.
- Drizzle some olive oil in the bottom a roasting dish and throw in the beetroot. Season and mix well to combine.
- Place in the hot oven for 25-35 minutes until the beetroot are cooked through and starting to char.
To make the salmon with dill butter
- Debone the salmon.
- Finely chop the dill.
- Mix the dill with x amount of butter.
