My family loves baked beans, but I wanted to create a healthy and flavourful alternative using gorgeous jarred white beans.
Cumin and paprika are lovely, robust, rich and earthy spices that go really well with beans, so I've included those along with some garlic and a touch of chipotle paste.
These beans are really simple to make (admittedly not quite as simple as opening a can, but the minimal effort is definitely worth it!)
Simply sauté some finely diced onion until translucent, then throw in the garlic and spices, followed by the tomatoes and beans. Then leave to bubble away for a short while to let the flavours combine.
2-3 tablespoons of extra virgin olive oil
I large white onion
2 cloves of garlics
2 teaspoon of paprika
2 teaspoon of ground cumin
1/4 - 1/2 teaspoon of chipotle paste (or to taste as pastes vary widely in terms of heat)
400g tin of chopped tomatoes
Jar of Queen white beans with cooking stock
Seasoning
- Peel the onion and then cut into small dice.
- Peel and finely grate or crush the garlic.
- Heat the oil in a saucepan and sauté the onion and over a low heat until the onion is translucent.
- Add the spices and garlic and stir to combine. Let it cook through for a few minutes, being careful not to let the garlic burn.
- Add the chopped tomatoes and seasoning and stir well to combine.
- Pour (or spoon) in the jar of black beans and any cooking liquid. Mix well, season and mix again.
- Bring up a vigorous simmer, then reduce the heat to a low simmer, cover and cook for 15-20 minutes to let the sauce flavours combine.
- Remove from the heat and serve.
